Chickpea, Spinach & Squash Gnocchi

I made Eating Well's Chickpea, Spinach & Squash Gnocchi a few months ago and have been wanting to make it again for a few weeks. (Yes, sometimes I make a meal, take pictures of it and don't tell you right away.  It's crazy, I know.)
Now that everything is settling down (and I've had pot roast for two nights in a row and really need to Not Eat Meat tonight), I think tonight might be the night.  I'm venturing out to the store in the snow this afternoon, and will be getting the ingredients and cooking this as you read about it.  Very meta.

  2. Looks scrumptious! I love gnocchi, but I've never had the spinach and squash kind before. Definitely something I'd like to try!

  3. I have never made gnocchi. I've eaten it in restaurants but I've never made it. I may have to stop at the big market by work and pick some up.

  4. It's hard to find squash over here in France. Do you think sweet potatoes or pumpkin would work just as well?

  5. Absolutely. I think pumpkin would work the same in this recipe. If you use sweet potato, I think add it later for a shorter cooking time. YOu don't want it mushy/mashed. Great idea!
